Gardianne de Taureau, the traditional bull meat combined
with olives and the rich red wine of the Camargue region. Fantastic

is Agneau aux raisins from the
village butcher of Espelette high in the Pyrenees. Superb on a bed
of pasta or with traditional roasted vegetables (cooked of course
